1Fill a shaker generously with ice cubes.

2Add vanilla vodka, Gabriel Boudier raspberry liqueur, fresh raspberry purée, chilled espresso, and vanilla sugar.

3Shake vigorously for about 15 seconds until you achieve a light, creamy foam.

4Double-strain using a fine mesh strainer to achieve a smooth, seedless texture.

5Pour the mixture into a chilled Martini coupe.

For a perfect foam, do a dry shake (shake without ice) first, then shake a second time with ice.
