Inspired by his feat, La Bêtise is a cocktail that plays on balance and innovation. Created by Vincent Mevrel, Head Bartender at the Club Bar in Dijon (@leclub.bar),it skillfully blends floral, fruity, and tangy notes, evoking the softness of the air and the sense of freedom Blériot must have felt while soaring over the Channel.

1Pour all ingredients into a shaker without ice.

2Dry shake (without ice) vigorously for 10 seconds to emulsify the egg white.

3Add ice and shake again to chill and aerate the mixture.

4Strain into a chilled coupe glass.

5Let the foam settle and garnish with an edible flower or a lemon zest.
For an even lighter and creamier foam, use the reverse dry shake technique: shake first with ice, then a second time without.
